sunday morning breakfast

most weekdays, i skip breakfast. it’s bad, i know, but the best i usually do is a bowl of honey bunches of oats at my desk. on weekends though, i crave giant hearty breakfasts. i want pancakes and omelets and bacon and muffins – like the “complete breakfast” you’d see at the end of a cereal commercial, where we’re expected to have a glass of orange juice and a glass of milk. above is my go-to breakfast for sunday morning, with a fresh mug of coffee (i’ve converted from instant to brewed!). eggs, sunny-side up, italian sausage, asparagus sauteed in butter and whole wheat toast – there’s nothing better. plus, it makes me feel like a line-order cook, if only for the 15 minutes it talkes to pull everything together –  it’s a fun game to see if i can it all ready at the same time so it’s still hot when i eat.

if you ignore the fact that i completely overcooked the eggs, this was an incredible meal. until recently, i never knew what to call sunny-side up eggs, because growing up we just called them “dippy eggs” (because you poke the yolk and dip the bread into it). and asparagus for breakfast? i’ve always loved it, but i was skeptical of the “asparagus and eggs with parmesan” craze until i tried it myself. there was actually another entire plate of asparagus that i wolfed down. that’s right, i ate an entire bushel of asparagus for breakfast. and it was worth it. what’s your favorite breakfast for a lazy weekend?

    I thought “sunny side up” meant you didn’t flip the egg, just cooked it until the white set. I make my eggs the way you have it pictured and I call it over-easy (runny yolk) or over-medium/over-hard (set yolk) if I’m at a diner I don’t trust. Now I wish I had breakfast instead of leftover dinner for lunch…

    My favorite breakfast is the one I don’t have to cook! Seriously I love a slice or two of bacon crumbled into a bowl of grits that have had an over easy egg stirred into it. I would eat that along side freshly baked home made biscuits.

    I love any meal with Italian Sausage! I make a slumgullion out of it with cottage potatoes and cheese whenever I have the 3 available together – breakfast, brunch or dinner. The local restaurants have “Bobby’s Special” which is my second favorite: hashed browns with bacon and cheese mixed in. It’s really good, too, as long as the hashed browns are thoroughly crisped.

    Breakfast tacos made with the week’s leftovers. Got one lonely sausage, half an onion or pepper, or leftover potatoes, plus some eggs, salsa and tortillas and you’ve got a great filling breakfast, and motivation to keep food from going to waste.

    Your breakfast looks so good! We like to do one big breakfast over a weekend. Usually it is bacon & eggs (I understand sunny-side up the same way Adrienne does above), or pancakes. Once a month or on special occasions, we love eating a stuffed Dutch Baby Pancake that is baked in the oven. Most of the work is peeling and cutting 2 apples and frying them with butter, cinnamon & nutmeg. The oven pancake itself is easy. The eggs/milk/flour/salt get poured into a ovenproof skillet that has been heating butter until VERY HOT then put in a very hot oven. From then on, it is a matter of a couple times pricking the big bubbles until they collapse and turning the oven temp down after 15 minutes (25 min. total baking time). It gets folded over omelet-style with the apples inside, then butter poured over and topped with confectioners sugar. I’d hate to guess what the calorie count is on this but one bite and you won’t care. But it is why we don’t allow ourselves to make it every weekend! Use REAL butter, of course.     Dutch Baby! i love those- I have never made them, but have had them at the Original Pancake House. Those are pretty amazing.

    I’m in the same boat of eating on the run during the week, and saving the lazy Saturday and Sunday mornings for humungo breakfasts. I love homemade buckwheat pancakes with walnuts and bananas. A nap might be required afterwards though…

    Wow! It all looks great, even the eggs. 🙂 I don’t eat fried eggs unless they are completely un-runny(Is that a word?). My favorite Sunday morning breakfast is biscuits and gravy!

    Let me start out by saying I’m a big fan of your blog.

    For me – It’s all about breakfast for dinner or at any other time but the morning (i.e. 3 a.m. after the pub). I love eggs, so I’ll take them any way I can get em. But what’s most important for my breakfast plate is a potato – latkes with strips of chives and a dallop of sour cream, rosti with folds of smoked salmon, hash browns with diced red pepper and onions, or just sliced, pan-fried and served with ketchup.

    This looks absolutely delicious. Asparagus is my favorite vegetable and this looks like the perfect breakfast. I usually eat the whole bushel in one sitting too..
