this is a baking blog! and more often than that, it&#8217;s a <a href=\"http:\/\/www.peterandrewryan.com\/baking\/2009\/02\/bacon-chocolate-chip-cookies-and-candied-bacon\/\" target=\"_blank\">bacon<\/a> blog! i know, i know, it&#8217;s a little jarring &#8211; and even i had some trepidation after our <a href=\"http:\/\/www.peterandrewryan.com\/baking\/2009\/02\/giveaway-win-a-copy-of-artisan-bread-in-5-minutes-a-day\/\" target=\"_blank\">last look at casseroles<\/a>, but you&#8217;ll just have to trust me. why? well, because this broccoli casserole is full of delicious things and topped with crumbled and toasted ritz crackers.<\/p>\n<p><a title=\"broccoli casserole 1 by pete bakes, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/32078869@N00\/3213803273\/\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm4.static.flickr.com\/3101\/3213803273_2ff5f30d1c_o.jpg\" alt=\"broccoli casserole 1\" width=\"550\" height=\"393\" \/><\/a><\/p>\n<p>got your attention, didn&#8217;t i? this casserole has made an appearance at nearly every family function for the past 5 or 6 years, since my sister-in-law first made it and blew us all away with how delicious it was. it&#8217;s a great way to get something green on your plate, especially if you aren&#8217;t a big fan of veggies. oddly enough, i love vegetables, but given the choice between raw broccoli and an indulgent cheesy broccoli casserole, i&#8217;m going with the casserole. it pretty much defeats the purpose of eating vegetables in the first place, but i think i can live with that.<\/p>\n<p><a title=\"broccoli 1 by pete bakes, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/32078869@N00\/3214651040\/\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm4.static.flickr.com\/3430\/3214651040_fb45f88cf7_o.jpg\" alt=\"broccoli 1\" width=\"550\" height=\"393\" \/><\/a><\/p>\n<p>as far as preparation, the dish is pretty much idiot-proof. pour a bunch of ingredients in a casserole dish, top with crumbled crackers and a drizzle of melted butter, and bake. serve to friends you love, or just grab a fork and dig in. isn&#8217;t it nice to see how we&#8217;ve streamlined and simplified the casserole process since its <a href=\"http:\/\/www.peterandrewryan.com\/baking\/2009\/02\/giveaway-win-a-copy-of-artisan-bread-in-5-minutes-a-day\/\" target=\"_blank\">heydays<\/a>?<\/p>\n<p><a title=\"broccoli casserole 2 by pete bakes, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/32078869@N00\/3214651398\/\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm4.static.flickr.com\/3265\/3214651398_852fc79e36_o.jpg\" alt=\"broccoli casserole 2\" width=\"550\" height=\"393\" \/><\/a><\/p>\n<p><!--more--><\/p>\n<blockquote>\n<p><strong>broccoli casserole<\/strong><\/p>\n<p>2 10 oz pkgs chopped broccoli<br \/>\n 2 eggs beaten<br \/>\n 1 cup mayo<br \/>\n 1 cup mushroom soup<br \/>\n 2 tsp chopped onion<br \/>\n 2 oz shredded cheddar cheese<br \/>\n 1\/4 cup butter, melted<br \/>\n 1\/2 cup crushed ritz crackers<\/p>\n<p>1. mix together broccoli, eggs, mayo, soup, onion and cheese in a large casserole dish . crumble the ritz crackers and sprinkle them on top. drizzle with the melted butter.<\/p>\n<p>2. bake at 350 F for 45 minutes. enjoy!<\/p>\n<\/blockquote>\n","protected":false},"excerpt":{"rendered":"<p>i know what you&#8217;re thinking: what is broccoli doing here?
